Apple Cinnamon Muffins
Streusel:
- 1 1/2 tsp butter, softened
- 1/2 c packed brown sugar
- 2-3 tsp cinnamon
Batter:
- 1 c sugar
- 1/4 c butter softened
- 2 eggs
- 1 c sour cream
- 2 tbsp milk
- 1 tsp vanilla
- 1 3/4 c flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 c chopped apples
PREHEAT oven to 375 degrees
FOR STREUSEL, mix ingredients and set aside.
FOR BATTER, mix sugar and butter in a large bowl; mix until well blended. Add eggs, sour cream, milk and vanilla.
Mix flour, baking powder, baking soda and salt , stirring with a whisk. Add to sour cream mix and stir untill combined. Fold in chopped apples.
Place liners in muffin pans. Fill half full. Sprinkle half of streusel over batter. Top muffins with remaining batter, then sprinkle with rest of streusel.
Bake 375 degrees for 20-25 minutes or untill a toothpick inserted in centre comes out clean.
TOBLERONE COOKIES
- 2 cups butter, softened
- 1 cup superfine sugar
- 3 1/2 cups flour
- 1/2 cup cornstarch
- 200g Toblerone, chopped
HEAT oven to 350 F
BEAT butter and sugar in a large bowl with mixer on high speed until light and fluffy.
Mix flour and cornstarch. Gradually add to butter mixture, beating well after each addition. Stir in chocolate.
DROP by teaspoonful 1 inch apart onto baking sheets.
BAKE 20 to 25 min. or until lightly browned. Cool 5 min. on baking sheets. Remove to wire racks to cool completely
Country View Manor Cinnamon Rolls
- 1 c warm milk
- 2 eggs
- 1/3 c margarine melted
- 4 1/2 c flour
- 1 tsp salt
- 1/2 c sugar
- 2 1/2 tsp yeast
Filling
- 1 c brown sugar
- 2 1/2 tbsp cinnamon
- 1/3 c butter softened
Icing
- 3 oz cream cheese softened (1/3 pack)
- 1/4 c butter softened
- 1 1/2 c icing sugar
- 1/2 tsp vanilla
- 1/8 tsp salt
Dissolve yeast in warm milk. Mix in sugar, margarine, salt & eggs. Add flour & mix well. Knead till smooth
Heat oven to 200 and then turn off. Put dough in greased bowl and cover with a moist towel. Rise till double (1 hr). Mix filling
Roll dough into a 16x21 inch rectangle. Spread dough with filling. Roll up from long end and cut into 12 rolls. Place in a lightly greased 9x13 inch baking pan. Cover with plastic wrap and but in fridge overnight.
Next morning take out and sit 30 min. Put in COLD oven, turn to 350 and bake 26-30 minutes.
Mix icing and spread on warm rolls.
* can be frozen after placing in pan, then night before place in fridge & next morning bake
* if you want to bake right away, cover pan and let rise 30 minutes. Bake in preheated 350 oven for 20-25 min.
